About the book >.>.> This book contains a collection of original hitherto unpublished recipes photographs and drawings also some recipes already pub- lished in my previous book French Pastry Confectionery and Sweets with many valuable secret methods of Continental chefs. Some of the recipes reprinted from French Pastry Confectionery and Sweets have been altered to bring them up-to-date. During the war owing to the restrictions on using sugar ground almonds etc. for fancy work the publishers withdrew my first book from the market the second edition having run out of print. I had many requests for it but as I only had a few copies in my possession I was unable to meet the demand. Therefore I have written this second book hoping it will prove helpful to those interested in the culinary art. After forty-five years of practical hard work I am able to give to the younger members of the profession simplified methods and instruc- tions for drawing up daily menus and for banquets receptions wedding parties etc. (MP)
