About the book >.>.> The recipes are varied ranging from dishes that are suitable for a small family lunch to a full-scale dinner party. The food itself is basically simple; one might describe it as country cooking in the grand manner. The book consists mostly of English and French country dishes some traditional American dishes and a few from other parts of the world. They do not depend on rich sauces and elaborate presentation or for that matter on large amounts of cream and wine but rather on the best quality ingredients cooked with care so that they taste of themselves. Many people feel that a dish is not suitable for a dinner party unless it contains an abundance of cream and expensive ingredients – an opinion with which I strongly disagree. Everyone who entertains likes their guests to feel a genuine effort has been made; but I prefer to put this into the cooking itself careful preparation and the buying of the very best meat vegetables butter and oil. A little cream in soups and sauces improves the texture considerably but a lot cannot fail to deaden the taste and reduce every dish to the same bland consistency. The recipes are all simple to follow and only a basic knowledge of cooking should be necessary. They are not intended for the professional cook but for the amateur who genuinely enjoys cooking and is prepared to devote a certain amount of time to it. As they have been collected with the ‘cook-hostess in mind dishes that are unsuitable for this kind of entertaining have been omitted such as those that require deep-frying. whidi means that the appears at the dinner table reeking of hot fat. Similarly I have avoided wherever possible dishes that require last minute attention. (MP)
