About the book >.>.> Sir John Butterfield MD FRCP Regius Professor of Physic Cambridge University I have known Alan Howard for twenty years as a very energetic biochemist and nutritionist. We first became acquainted through our shared research interests. He was particularly concerned about obese people and at that time I and my colleagues at Guy’s Hospital in London were looking into the adult onset of diabetes in patients who are usually overweight. For example why would glucose not move from the blood of ordinary fat people into their muscles (unless they exercised) as it did in thin people? In a way we were finding that almost all fat people were partially diabetic. Alan Howard’s approach to all this was more straight- forward more practical and much more directly concerned with doing something about the obesity. Quite simply he wanted to find out the best way to help people become thin and so he set to work along these lines in the Department of Medicine at Cambridge. Early on he was interested in what he called the *Cambridge Loaf from which much of the carbo- hydrate had been extracted before the flour was used to make the dough. Then he began to see that it was important not only to provide a low calorie diet but one which also ensured that the dieter would not go without vitamins minerals or trace elements. He wanted a diet which if possible would not turn the body’s defences to retaining water and so hinder weight loss.
